Sun, Soil, Water & Temperature Flavor the Chile
The chile we used to flavor our jerky is grown under the Southern New Mexico sun right here in the Pecos Valley. The chile is painstakingly grown by the Buzz Graves family just outside of Roswell, New Mexico. The Graves are fourth-generation farmers and they understand the relationship between the sun, the soil, the water and the temperatures where chile is grown. The fruit of their labor is green and red chile with a zesty, robust flavor. We are proud to flavor our jerky with this incredible chile grown in the Land of Enchantment. |

New Mexico Chile
In New Mexico the pepper grown most widely is the long, curved green pepper ranging from three to eight inches long. Normally peppers are a shade of green until they ripen and turn red. Also when they are grown in hot climates they tend to be hotter than those grown in cooler temperatures. |
